Our Yoshihiro Hongasumi knives are complimented with a traditional Japanese handcrafted octagonal Magnolia wood handle affixed with a Water Buffalo horn bolster.Â A protective wooden sheath called a "Saya" encases each knife and adds to its appearance when not in use. The Deba knife is a heavy knife that was made to filet and butcher whole fish. The heft of the Deba knife allows it to cut through the heads and bones of a fish, and its smaller pointed tip filets the flesh from the bones. The Deba knife can used be for chicken and meat but is not recommended for cutting through large bones. The Deba knife is one of the most essential of traditional Japanese knives and is a powerful component in the repertoire of many chefs. With a one-sided edge grind and slightly curved cutting face, this knife features all the traditional concepts you've come to expect from Bunmei. 6-1/2 inch stainless steel blade Handmade quality Bamboo handle Thick at the back, the broad, 6-1/2-inch blade on this professional-quality Japanese knife for butchering fish and chopping hard vegetables carries enough weight to chop through fish bones. The shape, weight, and wood handle--which has a ridge to ensure a secure grip--are traditional, but the blade is made of thoroughly modern, extra-hard, molybdenum/vanadium stainless steel so it retains its edge longer than high-carbon stainless-steel blades. Using a series of complex stencils, powdered enamel pigments are hand-applied between two layers of recycled glass and kiln-fired at over 1,500 degrees Fahrenheit.
